Southern Style Pimento Cheese

I suppose calling this dish “Southern style” is a bit redundant since pimento cheese is a Southern tradition. Not like we’re gonna get it confused with Midwestern pimento cheese or anything…

Regardless, this snack is a real treat & easy to customize to your liking. Whip up a batch to serve at your next holiday gathering. Your guests will fight over who gets to lick the bowl.

Pimento Cheese (adapted from Allrecipes)

2 cups cheddar cheese (the sharper the better but I’ve made it with mild & it’s still delicious)
8 oz cream cheese, softened
4 oz sour cream or plain Greek yogurt (stick with the full fat versions to help this dip maintain a creamy consistency)
1/4 tsp garlic powder
1/4 tsp onion powder
1/4 tsp cayenne pepper
1 jalapeño pepper, seeded & minced (I seeded & minced 8 slices of jalapeño from a jar)
1 (4oz) jar pimento, drained
Pepper, to taste

Combine all ingredients in a bowl. Chill. Serve with tortilla chips, crackers, veggies, etc or slap some between two slices of bread to make the most amazing grilled cheese in the history of grilled cheese. True story.
