Crispy Cheesy Chicken Breasts

Dinner rut. Happens all the time. Doesn’t mean the food isn’t good…just that you’re tired of eating the same things over & over. Sometimes all you need is a tiny shake up to make your family’s tummies smile.

This tasty chicken recipe can easily be made with boneless, skinless chicken breasts or split chicken breasts (which is what I used) & I don’t see why you couldn’t use drumsticks or thighs…just adjust cooking time.

These crispy cheesy chicken breasts are so juicy & flavorful it’s crazy. And easy. I love easy dinners. šŸ™‚

Crispy Cheesy Chicken Breasts (adapted from Cheeky Kitchen)

2 split chicken breasts
1/2 cup milk
1/2 cup shredded cheddar cheese
1 cup Italian breadcrumbs
Garlic salt, to taste

Preheat oven to 400 degrees. Place milk & breadcrumbs in separate shallow bowls. Season breadcrumbs with garlic salt to your liking. Dip chicken in milk, then breadcrumbs & place on parchment lined cookie sheet. Top with shredded cheese.


Tent with foil & bake for 35 minutes. Remove foil & bake an additional 10-15 minutes, or until juices run clear. (If you’re using boneless chicken you’ll want to shorten your cooking time accordingly.)


I can’t remember the last time I had chicken this juicy. Tenting it while cooking really helps seal in the juices. What a great trick!

These split chicken breasts were so big, one fed all three of us…guess who had tasty leftovers the next night?? Don’t you just love that? I know I do!
