Quinoa Breakfast Bowl

When a Gaining Mommymentum friend mentioned she was looking for breakfast ideas AND ideas for eating more quinoa, I knew I had just the thing! I saw this recipe idea on skinnytaste.com a while back but forgot about it until now. I was excited to give it a try…a protein-packed breakfast was just what the doctor ordered! Literally.

I tweaked it a bit to fit our family’s needs & what I had on hand & I encourage you to do the same!

Quinoa Breakfast Bowls

For the quinoa:
1/3 cup uncooked quinoa
2/3 cup milk, rice milk, almond milk, etc
2 tsp brown sugar (or other sweetener if you’d like)
1/2 tsp vanilla

On top:
Fresh fruit (I used strawberries & blueberries)
Honey
Milk (rice milk, almond milk…whatever your family likes)

Combine quinoa, milk, brown sugar, & vanilla in a small sauce pan & bring to a gentle boil over medium heat for about 5 minutes.

Reduce heat to low & cover. Cook another 15-20 minutes, until all liquid is absorbed. Fluff quinoa & transfer to a bowl (or bowls if you’re into sharing…makes enough for 1-2.)

Pour additional milk over quinoa to your liking. Top with fruit & a drizzle of honey.

Enjoy the staying power of this slightly sweet healthy breakfast! You could even make your quinoa the night before & warm it up in the morning. Easy peasy when you don’t have time to cook in the am.
