About 2 1/2 years ago I shared one of my favorite chicken dish recipes with a fellow blogger (Laurie over at Passionate Penny Pincher) who was looking for dinner inspiration. This chicken with orange sauce has ALWAYS been a big hit in our family though I tend to forget about it for months at a time…but when the thought of it pops into my head I can think of nothing else until it gets in my belly!! Apparently it was a big hit at her house too and she shared the recipe with her readers (see first link…it is the non-gluten-free version.)
Now, here I am, 10+ months into this blogging thing, sharing recipes every week….and I haven’t shared this one yet! What?! Well, I recently whipped up a gluten-free batch (since that’s how we roll these days with Buddy’s allergies) and it was absolutely 100% as delicious as the original. In fact, you honestly could not tell the difference. So good.
Shall I introduce you? Yes, yes I shall.
Gluten-Free, Allergy Friendly Chicken with Orange Sauce
2-3 large boneless, skinless chicken breasts, cut in half
1/2 tsp salt (feel free to omit if you want)
1/4 cup (half a stick) unsalted butter, divided
2 Tbls all purpose gluten-free flour
2 Tbls sugar
1/4 tsp dry mustard
1/2 tsp cinnamon
1/8 tsp ginger
1 1/2 cups orange juice (pulp free please!)
hot cooked rice (enough for your family and leftovers…we prefer brown rice at our house)
Sprinkle chicken breasts with salt and brown in a large skillet with 2 Tbls butter.
Meanwhile, throw all your spices and gluten free flour into a small bowl and set aside until chicken is browned.
Set chicken aside. Toss remaining butter in the pan and allow to melt. Scrape up all the brown bits from the bottom of the pan while you wait but don’t get rid of them…just push them to one side. Add flour and spices and whisk to create a thick paste.
See all those beautiful browned bits up at the top? That’s called flavor! Go ahead and stir those in to the paste you’ve created. You’re ready to add the oj! Add about a 1/2 cup, stir well to combine, then another 1/2 cup, and so on until you have a beautiful orange sauce.
Get that sauce simmering and set your chicken back in the pan with it.
Go ahead and spoon the sauce all over the chicken. Now cover your pan reduce heat to low (keep it simmering but it doesn’t need to be going crazy) and let the chicken cook and soak in that delicious sauce for about 45 minutes, or until the chicken is completely cooked through.
I like to peek at mine and “baste” the chicken every so often. Nothing scientific. I think it’s really just an excuse to allow a little bit of the fragrant steam to escape…mmmm…it smells SO GOOD!
Serve over rice with whatever veggies please you that day. Make sure to spoon LOTS of that delicious sauce all over everything. It is just heavenly. Don’t skimp. Your rice will thank you. 😉
