When I think Valentine’s Day, I think date night. But when you have kids…date nights are trickier…especially on a lovey dovey “holiday” when you need a sitter but all the sitters are out on their own date night. Enter romantic dinner at home. And would you believe you can have this meal on the table in less than 30 minutes? Yep. I promise. I timed myself last night. 29 minutes. And I made risotto as a side. That’s right. Restaurant quality filet mignon AND risotto in under 30 minutes. You can do it. It’s all about timing things and being organized. Ready? Here we go.
I used this risotto recipe (loosely…I’m bad about not always following recipes…I skipped the wine.)
Start the risotto, wrap up some asparagus up in bacon, drizzle it with olive oil and sprinkle on some pepper. Preheat oven to 400. Now we’ll start the steaks…
Restaurant Style Filet Mignon
3 Tbls unsalted butter
2, 6-8 oz. filets (bacon wrapped if that’s your thing…that’s how we roll)
salt and pepper
a cast iron skillet (or other skillet safe for stove to oven cooking)
Melt butter over medium high heat & sprinkle both sides of steaks with salt and pepper.
Place steaks in the skillet and do not move them for 3 minutes. You want to get a nice sear on the meat. If you move it too soon it is likely to stick. Spoon butter over top of the steak occasionally.
Sorry that pic is a little blurry. It’s tricky to get a shot like this while you’re also stirring risotto and putting asparagus in the oven. That’s right…get your asparagus in the oven now! Actually, stick it in as soon as you set those steaks in the pan. Ok. Back to the filets. Turn after 3 minutes and continue spooning butter for an additional 3 minutes. Then pop em in the oven.
Set the timer for 6-8 minutes (depending on thickness) and go finish up the risotto. Pull it all out together & plate.
Voila! Of course my 2-year-old was dining with us this time and managed to take down half a filet on his own…sheesh. He also gobbled the risotto & ate several bites of the asparagus!!! Wahoo!
If you wanna get really fancy you can even mix up some compound butter to top your steak but it’s so good without it you don’t need it.
