Late night snack! I think I’m going to run to the store and grab the ingredients for this. It’s SO easy and I love having it in the fridge to throw in a lunch or serve with dinner.
1 package frozen cheese tortellini
1 package frozen sugar snap peas (thawed)
4 tsp. olive oil
2 tbsp. balsamic vinegar
4 tbsp. Parmesan cheese
1 package of cherry or grape tomatoes
1 finely chopped red onion
Black pepper to taste
1. Prepare the tortellini according to the directions on the package.
2. Add the peas to the tortellini during the last 2 minutes. (Forgetting to get them out to thaw, I’ve added them frozen and let it cook an extra 2 minutes and it turned out fine).
3. Drain and rinse.
4. Mix oil and balsamic vinegar in a large bowl. Add the tortellini, peas, tomatoes, onion.
5. Toss it all together and then sprinkle on the Parmesan cheese and black pepper.
Serve warm or chilled. Enjoy!
